My Fave Fast + Healthy Dinner for Busy Babes!

Hi ladies! If you’ve been following me on Instagram, then you’ve probably caught some of my food shares lately. I’ve been using my IG story to debut my new show, “Cookin’ with Cara” (half kidding), but I am sharing lots of fast, healthy, delicious meals with you guys and I’ve been getting requests to post some recipes here. You may have also read about my new positive weight loss journey (I’ve already lost 15 lbs and my energy is through the roof and it’s literally the easiest thing ever). As a busy entrepreneuress who is constantly focused on work, it used to be extremely challenging to nourish myself. I placed my health on the back burner (no pun intended) and I have spent more nights than I’d like to admit believing that 3 glasses of wine and greasy Chinese food was an acceptable dinner. At my desk. In my pajamas. I recently became unavailable for that for many reasons, the first of course being my health, and the second of course, being the health of my business. If we’re not thriving, we can’t expect our business to be. If our energy is not right, everything else falls apart. Even if you’re not running a business, you are probably all too familiar with what it’s like to put yourself last on the list of priorities. Well – that’s changing today.

I thought I’d start by sharing my go-to dinner as of late. This meal are so easy to prepare it’s laughable, and it will leave you full and satisfied. You can buy nearly everything pre-cut and pre-made, so all you really have to do is heat everything up and throw it on a gorgeous china plate (because, let’s face it, food tastes better when your plate is pretty). I call this my “weight loss meal” because when eating like this and following the rest of the mindful nutrition plan I’m on, the extra pounds will melt off.

I present you: Rotisserie Chicken and Cheesy Cauliflower Rice.

Step 1. Buy or order a rotisserie chicken. I get my at Whole Foods, through Fresh Direct or Food Kick (if you’re in NYC), or you can usually find them at your local supermarket. Follow instructions on package to cook. You heat it in the oven at 400 degrees for 40 minutes. You don’t even have to season the damn thing.

Step 2. Buy pre-riced cauliflower rice. Again, I get this at the stores mentioned above. I like to also add chopped brocolli or diced mirepoix mix to this to give it extra flavor and a double dose of veggies. I started buying my veggies pre-cut years ago and have never looked back. Sure, you may pay an extra 50 cents or an extra dollar but it’s guaranteed you will eat them because they are already prepared. No excuses. I know if I’m staring at a giant head of cauliflower and thinking I need to bust out a food processor and do dishes I will walk away and order a pizza. Make it easy on yourself.

Step 3. Time to make the rice! About 10 minutes before your chicken is done, you want to take a big frying pan and spray it with a non-stick spray. I use cold-pressed organic olive oil. Heat the pan on medium-high heat. Add your base of the mirepoix mix if you choose to. Then add cauliflower rice. Add a drop of water and cover for 3-5 minutes. You want the rice to soften a bit, so that’s the goal here. Check on it and remove the cover when the texture is to your liking. Throw in some chopped brocolli if you choose and let that get slightly soft. I always top my rice with cheese for flavor. Any kind you like works! I usually choose something really flavorful like shredded Asiago or sharp cheddar. You’ll want to throw this in at the last minute so it melts in. It literally tastes like mac and cheese. You’re gonna freak.

Step 4. Bust out your prettiest plate. I collect vintage china on Etsy because I just love styling my food. Plate your food, snap a pic and post it to Instagram to show the world how in control of your life you are, and then mangia!
